my less serious day: tights and tomato paste

The title of this post captivated you, didn't it? Yes...I wore tights and ate tomato paste in the same day. My life is exciting [wait, no it isn't. not.really.at.all].

This morning began with a 36-minute stationary bike ride (ramp interval) followed by a 15-minute walk with L. During the afternoon, I had to teach a class across campus and this allowed me to fit in another 20-minute walk to class and back. After work, I attended a 60-minute Body Pump class.

Eating.


Breakfast was a bowl of Kashi GoLean Original and Post Great Grains Cranberry Almond Crunch cereals, 1/2 sliced banana, and almond milk.


Lunch was a [non-exciting] Lean Cuisine. My afternoon snack was a sliced Pink Lady apple (glad to see these back in the store) with peanut butter.


For dinner, I enjoyed a cup of wild mushroom and herb couscous (Near East) topped with baked chicken (baked with olive oil, Mrs. Dash Garlic and Herb seasoning, and salt), which I topped with tomato paste. I always have leftover tomato paste from recipes and never know what to do with it - putting a light layer on baked chicken added a hearty tomato taste that I really enjoyed.

On the side, I ate a pile of steamed spinach topped with roasted cabbage and onions. I have never roasted cabbage before, but was inspired by Emma's recent cabbage-roasting post - and it turned out to be extremely delicious. I just roasted it simply in cooking spray, salt, and pepper for 20 minutes at 450 degrees, tossing halfway through.


Dessert was a bowl of plain Greek yogurt mixed with leftover homemade cranberry sauce [thanks, Mom!] from Thanksgiving. Yum.

  4. Your outfit is so cute, as usual. I just bought a few new pairs of tights from Banana Republic. I can't wait to bust them out this weekend. :)
    Your cranberry sauce and roasted cabbage both sound so delicious. Considering I roast nearly every other vegetable, I'm sure I would love roasted cabbage. I need to try it!

    Love your veggie packed dinner, missy - awesome! I swear you can roast any vegetable and it tastes heavenly ;-) And we all have those days when a frozen meal is absoultely perfect, and necessary. I love Amy's meals, in particular the brown rice bowl - I used to have them often when I worked shifts, they were so convenient.
    Apple + nut butter is such an delicious snack. And you were epic with workouts today - so active! Rock on, lol! Love body pump so much.

  7. Hooray! I am so glad you liked the roasted cabbage. Definitely my favorite way to cook any veggie.

    I wore booties today too! My feet hurt now, but I looked cute.

  8. Roasted cabbage sounds interesting! I've only ever had it in a stir-fry, so it'd be fun to try roasting it. :) Normally I don't buy stuff like tomato paste 'cause I cook for one and am so afraid that it'll end up spoiling before I get to use it again... All your eats look as great as your necklace! :D
