Another Wednesday, another WIAW.
Figure 1. Breakfast: a bowl of Kashi GoLean Original mixed with Post Great Grains Cranberry Almond Crunch, 1/2 sliced banana, and almond milk with black coffee.

Figure 4. Dinner: wild mushroom and herb couscous (Near East) topped with yummus (2T hummus + 4T plain Greek yogurt = i.am.obsessed.yummus.is.awesome) and toasted walnuts alongside roasted Brussels sprouts.
For simple roasted Brussels sprouts:
Trim the stems off of ~1lb Brussels sprouts and cut each sprout in half. Toss lightly in oil (I use 1/2 tsp olive oil and cooking spray), salt, and pepper. Roast for 30 minutes at 400 degrees, turning halfway through.And that concludes another What I Ate Wednesday (featuring what I ate Tuesday, November 29).
Your dinner looks pretty darn amazing, I must say. I love brussel sprouts, and that yummus sounds uh-ma-zeeng.

ReplyDeleteI tried almond milk once and it taste funny... But then, I looked at the ingredients and it mainly consisted of filtered water and cane sugar! I should give them another try ;)

ReplyDeleteYour Wednesday looks so gourmet! That is my favorite way to eat brussels. I love how roasting them caramelizes them a bit. It's like veggie candy!
ReplyDeleteI've started mixing my hummus with a bit of apple cider vinegar and using it as a dressing. Trying ti with yogurt next time! Great idea.
Oh my gosh, yummus sounds amazing! :-) And that dinner looks wonderful. So good. I really want to start eating grains at dinner - I'm so lazy I normally eat toast or potatoes or squash, I'm totally not in the habit of making grains, but your posts are inspiring me and opening my eyes to the deliciousness that my dinners could be! :-P Those cocoa roasted almonds look proper good! :-) Have a lovely day, Sara! <3 xyx
