yep - those meals look pretty delicious! i'd repeat them too. :)
ReplyDeletei don't cook salmon very often, but i don't know why. i love it & it's not that hard. i should work on that!
yeah it really is simple - i should cook it more myself!
DeleteMint in pasta? I never would've turned to that, but I bet it would be awesome with the melty goat cheese. I may pick up some mint next time I'm at the produce market and do a mint + goat cheese crostini!
ReplyDeleteI always roast my asparagus in Parmesan; there's just no other way for me! lol. Your pasta looks fab - love goat cheese. Will take it on anything!
ReplyDeleteYou can't lose with adding cheese to veggies!
DeleteOkay I have to make asparagus soon because your picture is making me crave it majorly!
ReplyDeleteGorgeous pasta! And asparagus. I haven't had asparagus since last spring--it's just about time...
ReplyDeleteThat pasta looks AWESOME!
ReplyDeleteAnything with eggplant in it is right up my ally!
i am the same way about eggplant. i'll take it anywhere anytime anyway.
DeleteWould not have thought to add mint to pasta! But that sounds very tasty.
ReplyDeleteAlso tasty- roasted asparagus. Always.
Mint in pasta sounds amazing!
ReplyDeleteI'm such a meal repeater. When I find something I like, I always wind up eating it like crazy until I find something new to obsess over.
