That is a sigh of relief to have returned to normalcy. Don't get me wrong, I love holidays and all the indulgences that accompany them (in fact I am usually responsible for baking excess treats...), but there is something about returning to simple, healthy, every day food that is refreshing. Today's WIAW captures just that. Holla, Jenn.
Figure 1. Breakfast: a bowl of Kashi GoLean Original mixed with Cascadian Farms Fruit & Nut Granola, 1/2 sliced banana, and almond milk, alongside several mugs of strong, black coffee. I, simply, love cereal.
Figure 2. Lunch: a loaded spinach salad (I like my salads just like I like my ice cream sundaes: the more toppings, the better). Today my salad had grape tomatoes, carrots, radishes, toasted pecans, dried chopped dates (love), leftover Brussels sprouts, hummus, and balsamic vinegar.
Figure 3. Afternoon snack: a piece of whole wheat toast topped with peanut butter, dates (again, love), and cinnamon alongside a mug of green tea and some soothing afternoon natural lighting.
Figure 4. Dinner: red beans (+ french green beans) and rice and a heaping pile of roasted broccoli. As it turns out, broccoli stalks are awesome. Leaving them on = more broccoli bang for my buck.
Figure 5. Dessert: plain Greek yogurt with chopped cocoa-dusted almonds.
And that concludes another What I Ate Wednesday (featuring what I ate Tuesday, January 3).

I am so with you on returning to normal... it's nice to get back to a schedule and also ebb away from a constant focus on FOOD! I love the holidays too, but yeah, time for a break

ReplyDelete@Gina haha! you know after our amazing salads with dates i went out and bought a bag. they are awesome on salads, cereal, oatmeal, toast - you name it.
ReplyDeleteI do the same thing with the broccoli stalks, haha...they're definitely less tasty but they still have the nutrients, so I'll be danged if I throw them away!
