weekend review: satisfy your craving

Friday night craving: a bacon cheeseburger and beer (yes, you read correctly). Craving satisfied.

Saturday night craving: ooey, gooey, veggie- and cheese-filled lasagna.

Figure 1. Out of the oven: spinach feta lasagna. This lasagna, which isn't overly cheesy while still feeling decadent with a secret layer of tofu for extra protein and a  creamy texture, is my current favorite version.

Figure 3. A big bowl of veggie-goodness: kale with roasted red peppers and olives.

Figure 4. Saturday night's dinner: spinach feta lasagna, kale with roasted red peppers and olives, and toasted nut and seed bread dipped in olive oil.

Craving satisfied.

  1. All this kale goodness around the Internet is seriously making me jealous. I can't find kale around here, so I stick with my Asian greens. Your cravings look amazing.

    1. yeah the kale salad was surprisingly delicious. i usually make it more simple with just olive oil salt and pepper - but this is a great way to change it up!

  4. sometimes you just have to satisfy those cravings. i had homemade mac and cheese this weekend (even though i'm trying to limit my cheese intake), but i did make it with spinach, broccoli, and green peppers. i also had onion rings at a brew pub, but i ordered them with a salad. craving satisfied without too much shame :)

    1. speak it gina! healthy living and keeping a healthy diet is all about maintaining balance. i subbed my fries for an arugula salad with the burger - craving satisfied like you, but it was still somewhat balanced.

  5. The cheeseburger/beer combo is one that just can't be beat. Seriously, one of the things in life that just make life better. And that lasagna?! Holy smokes, lady. I think I need to make me some of that this weekend! Looks incredible!

  7. Tofu in lasagna is a brilliant idea. And that particular lasagna looks just delicious.

    Also, bread and olive oil is the most underrated combo ever.

  8. Lasagna is one of my all time favorite meals, and yours looks awesome! I love the feta addition....I think I will have to include that in mine next time I make it!

  14. the kale look sooo sooo yummy! I bought one last Saturday at the store but havent used it yet! I am still unsure how to prepare it? do you just use olive oil or do you steam it before and eat it completely raw??? I am sooo unsure about this, because last time I made baked kale chips, I had such a tummy ache the whole night :(((

    1. thanks dosii. i replied to your question on your blog. my favorite way is to sautee kale but you can eat it raw too!
