weekend review: quick and easy

This weekend was all about quick and easy. Meals and snacks that took 30 minutes or less to make. I'm just like Rachel Ray, except not completely obnoxious...

Figure 1. Friday night's dinner: sausage, goat cheese, and spinach fettuccine with roasted zucchini and summer squash. I used this recipe from Cooking Light except substituted spinach for the arugula and goat cheese for the pecorino Romano because that was what I had on hand. Delicious.

Figure 2. Saturday afternoon baking: spicy honey roasted almonds and cocoa-dusted cashews.

Figure 3. Saturday night's dinner: mushroom, corn, and poblano tacos topped with sharp cheddar cheese and plain Greek yogurt with a romaine lettuce salad with cilantro, grape tomatoes, and avocado tossed in spicy southwestern vinaigrette.

  2. I totally snorted my coffee up my nose with the Rachel Ray reference - but the short easy meals really are the best! I'm dying for those tacos. Enchiladas were on my meal plan this week but I totally forgot all of the stuff I needed for them at the grocery store - thanks to that picture I'm dying to head over to Publix to pick up all the ingredients I forgot!

  4. How were the corn and poblano tacos!? I've had them bookmarked foreveeeer but my family eschews vegetarian meals. They look amazing so maybe I really need to get on making them!

    1. they are awesome! you should make them. mine were super spicy because i used Sriacha instead of hot sauce - but i like them that way. this is my second time making them...

  6. Cocoa dusted cashews?!?! I've never had those!!! But I love the cocoa roasted almonds, and I also love cashews... so it seems like fate ;)
