what i ate wednesday: issue 41

Happy July 4th, blog loves. Care to see some food? 

 Figure 1. Breakfast: a bowl (x2) of Kashi Simply Maize (a new find: I am obsessed) mixed with Kellogg's All-Bran, 1/2 sliced banana, and almond milk.

Figure 2. Lunch: a romaine lettuce salad with an tomato, carrots, an Amy's Sonoma veggie burger, smoked almonds, red wine vinegar, and ketchup.

Figure 3. Afternoon snack: a Gala apple and cocoa-roast almonds.

Figure 4. Dinner: pan-seared chicken with tomato-olive relish, roasted asparagus with Italian herbs, and Near East wild mushroom couscous. Pretty damn gourmet for a Tuesday, no?

Figure 5. Dessert: kettle corn topped with jerry-rigged chocolate PB2 (2 T regular PB2 + 1 T cocoa powder + almond milk).

And that concludes another What I Ate Wednesday (featuring what I ate Tuesday, July 3).

But, wait! Since it fun, food, AND fitness WIAW month I should tell you about my workouts. This morning I hit the pavement for a 30-minute run at working pace (i.e., a few notches above comfortable) followed by a short walk with my pup. I also took a short walk on my lunch break to stretch the legs. My day ended with a 60-minute PiYo class (fusion of Pilates and yoga - look for a review soon!) and another short walk with my pup when I returned home.

  5. Popcorn is the best night time snack. I love roasted asparagus too, it is just so expensive now.

  9. The couscous with mushrooms sounds delicious, so does the asparagus! Last time i ate asparagus was a year ago - too long for sure :)

  10. Your chicken with the tomato relish looks so good. I adore asparagus.. but don't seem to cook with is too much. What a yummy day of eating :)

  11. Yummm, popcorn with PB is always an excellent combination! That dinner definitely looks and sounds very gourmet... "Near East wild mushroom couscous" definitely sounds like it came off a restaurant menu! :)

  13. aha my salads look like yours except with mustard swizzled across the top in place of ketchup. I have discovered that I don't hate it as much as I thought I did though, which is good.
    what a gourmet dinner there- have you considered changing to being a plated food designer? heh I kid.

  16. I can't wait to hear your thoughts on the PiYo class! My gym offers something similar which I've taken a few times and I loved it!
    And I'm so glad I'm not the only one who puts ketchup on my salads! My friends and family find it repulsive but I'm addicted! And when there's a veggie burger in there, it makes sense, right? (:
