This weekend I cooked with two new (to me) ingredients: fennel and fresh beets. Both were easy and delicious - if you haven't worked with them yet - I encourage you to give these recipes a try.

Figure 4. Out of the oven: turnip and sweet potato gratin. Holy freakin' crap this was amazing.
Figure 5. Saturday night's dinner: turnip and sweet potato gratin, maple-balsamic-glazed pork medallions, and steamed broccoli.
Figure 6. Out of the oven (this is one of my favorite healthy go-to dishes): baked vegetable ziti.
Figure 7. Sunday night's dinner: baked vegetable ziti and beets with shallot vinaigrette on top of raw spinach. Delicious!

ReplyDeleteThat pizza... I die. I love fennel! A few years ago I made this really good salad out of Fine Cooking with quinoa, fennel, apple, and gouda. It was SO good (and its somewhere on my 'Recipes I've made' Pinterest board if you're interested)!
ReplyDeleteNew ingredients are always fun! I use fresh beets a lot, but have never given fennel a go. I love the idea of it on a pizza!

Fennel in salads is one of my absolute favourite! I love beets too but lately have been loving them more juiced. Amazing liver cleansers and blood cleansers too!

ReplyDeleteOmg girl, you are KILLING me!! Everything looks so...well, like friggin' FOODPORN!! Especially that gratin! Holy wow!! I just recently started experimenting with fennel. I've definitely NOT a fan of licorice, so I never even gave it a chance before, but the flavor is so light...I love it! I bet it was delicious on that pizza too! And beets? Mmm, I love me some beets! I put those suckers in EVERYTHING...pancakes included! ;)
