what i ate wednesday: issue 37

Three meals, three sensible snacks, one happy belly.

  Figure 1. Breakfast: a bowl of Kashi GoLean Original mixed with Post Great Grains Raisin, Date, and Pecan cereal, a sliced banana, and almond milk.

Figure 2. Lunch: a spinach and romaine lettuce salad with tomatoes, dried cranberries, smoked almonds, hummus, and balsamic vinegar. Carrot sticks with peanut butter on the side (move over apples, carrots and peanut butter is a killer combination).

Figure 3. Sensible snack #1: plain Greek yogurt, a sliced banana, and Quaker Oatmeal Squares.

 Figure 4. Sensible snack #2: a post-run/pre-Body Pump Golden Delicious apple.

Figure 5. Dinner: asparagus and mushrooms (sauteed with olive oil, salt, and smoked paprika), quinoa, a crumbled MorningStar Farms spicy black bean burger, salsa, and a dollop of plain Greek yogurt.

Figure 6. Sensible snack # 3: a bowl of dry Cascadian Farm vanilla almond granola.

And that concludes another What I Ate Wednesday (featuring what I ate Monday, June 4).

  3. I have the same bowl as you (the one with the salad in it!) :) All your meal looks delicious, I haven't had a golden delicious apple in ages, now I have a craving :)

    1. i used to only eat golden delicious apples and i still stand by the fact that they are one of the best apple varieties to pair with a pile of peanut butter.

  5. Hmm, carrots with PB? I've done carrot fries with peanut butter, so I guess the raw sticks would be similar. I just always think of them as more savory!

  8. I've never been a huge PB on apples fan (although I LOVE both of those items separately), but PB on carrots? Oh yeaaaah. All your food looks so good--especially those mushrooms and asparagus.

  10. I have never tried carrots + PB but I can't think why they wouldn't be PERFECT together! And thanks for the dinner inspiration - I have a bowl of bulgur wheat in my fridge still to be used and veggie burgers in my freezer. Sauteeing up some veg to go alongside sounds FAB. But on the menu tonight is actually the portobello burger you linked to a couple of weeks back. Lol. My dinners are starting to look like copycat Sara meals!

    2. I loved it so much I'm having it again tonight! The copycat sauteed mushrooms and broccoli (I'm not a huge asparagus fan) with crumbled veggie burger and bulgur (out of quinoa) will have to wait till tomorrow. I'm still stuck on Sara copycat meal #1, too good! :)

  16. Everything looks delicious, Sara, but seriously, I am dying to get my hands on that dinner plate! I LOVE Morning Star burgers! I've never tried the spicy black bean one before. Have you tried the new Asian flavor? It looks SO good! I just saw that my local supermarket is running a special on them this week, so I'll have to go and see what kinds I can snatch up and hoard...ahem, I mean...nah, I was right the first time! ;)

    And I totally agree...carrots and PB is one of the BEST combos! Hard to believe I didn't like it the first time I tried it!

    1. morningstar burgers are my obsession. the chicken patties are my go to, but these black bean ones i bought on a whim and they are really fantastic. i haven't tried the asian flavor but will totally look for that next time i stock up. no shame in hoarding the goodness!
