what i ate wednesday: issue 38

Figure 1. Breakfast: a bowl of (gasp!) Cheerios mixed with homemade peanut butter honey granola, 1/2 sliced banana, and almond milk.

Figure 2. Lunch: a spinach and green leaf lettuce salad with carrots, roasted red peppers, cottage cheese, sunflower seeds, and balsmic vinegar.

Figure 3. Afternoon snack: a Gala apples and cocoa-dusted almonds.

Figure 4. Dinner: wild mushroom couscous, satueed asparagus, arugula, feta, 1/2 avocado, all mixed together and topped with fresh lemon juice, salt, and pepper.

 Figure 5. Dessert: more peanut butter honey granola (obsessed) and blueberries.

And that concludes another What I Ate Wednesday (featuring what I ate Tuesday, June 12).

  1. looking good! Especially the lunch, i'm obsessed with cottage cheese! so creamy, yummy, healthy and tasty. Your peanutbutter honey granola looks awesome too, need to try that (-:

    1. i agree. i used to eat cottage cheese all the time, but just bought it on a whim this week. i am in love all over again!

    1. haha, i know..right? changing things up this week. :)

      i buy the almonds at the store. i stock up when they are on sale. but i have been wanting to try to make my own. keep you posted!

  7. I think we've been on the same wavelength with food the last couple of weeks. it's been so much more fun to cook and eat right now b/c some of my favorite stuff is in season - especially avocado!

  8. Cottage cheese is one of my favourite topping to have on a salad lately. Its so refreshing and yummy! Loving your eats this week girlie!

Super chuffed my granola is featuring prominently in your diet! :) Yours does look way more clustered than mine, which indicates more sweetener, so maybe our measuring cups are slightly different (I am convinced there's a measuring cup conspiracy, as I have two totally different sets in my kitchen and I don't believe they hold the same amounts. I need to test this). Either way, extra clusters don't hurt. I love me some granola clusters :):):)

I realized that measuring cup idea was majorly flawed seeing as recipes work in terms of relativity to other ingredients, so if all of your measuring cups were, say 1/8 larger than mine or something, your other ingredients would also be more, so it would still be the same. So never mind. Let's just put it down to the humidity/air temperature of our different living locales or something ;)

  14. Cottage cheese is one of my FAVORITE salad toppers! It is so yummy, and the added protein really fills me up. I love how green your dinner is...looks tasty!
