On Sunday, I looked up at my boyfriend and declared, "I want red meat tonight!" Knowing that this type of craving doesn't happen very often - we made sure to create a dinner to satisfy.
Figure 1. Out of the oven: zucchini casserole from Skinnytaste. This stuff was fantastic, although it says this casserole makes 12 servings. 12 elf servings, perhaps. The two of us consumed 3/4 of this delicious concoction.
Figure 2. Sunday night's dinner: grilled rib-eye steaks cooked to a perfect medium rare, grilled corn on the cob, zucchini casserole, and local fresh-baked Italian bread. craving.satisfied.
I'm going to check out that zucchini casserole, it looks like it would be great for preparing ahead of time and taking for lunch to work! Although I am trying to incorporate red meat back into my diet, I never know what to pair with it, but your dinner looks like a great combination of flavours :)

It's so funny that you mention eating red meat because I literally JUST started trying to eat red meat again after 15 years of living on chicken, fish & turkey! Pretty eventful, if I do say so myself ;)
