Figure 1. Saturday morning baking: orange-apricot-bran muffins. I used this base recipe for bran muffins with the following substitutions: 1/4 chopped dried apricots were added to the dry mixture; reduced the sugar to 1/4 cup; used 1 cup all purpose flour + 1/4 cup whole wheat flour; added the zest of one orange to the dry ingredients; substituted canola oil with 1/4 coconut oil; and added extra milk to the wet ingredients. They turned out delicious!
