weekend review: muffins, bread, and cookies oh my

Figure 1. Saturday morning baking: orange-apricot-bran muffins. I used this base recipe for bran muffins with the following substitutions: 1/4 chopped dried apricots were added to the dry mixture; reduced the sugar to 1/4 cup; used 1 cup all purpose flour + 1/4 cup whole wheat flour; added the zest of one orange to the dry ingredients; substituted canola oil with 1/4 coconut oil; and added extra milk to the wet ingredients. They turned out delicious!

Figure 2. Saturday night's dinner: crock pot sauerkraut pork chops, mashed potatoes, and butter-roasted carrots. I'm sorry this looks really unattractive, but I like to drown my pork/potatoes in sauerkraut....

Figure 3. Sunday afternoon baking: pumpkin ale bread (I used this recipe, but used 1/4 cup whole wheat flour, Terrapin pumpkin ale, and 2 T of butter instead of 4).


Figure 5. Sunday night's dinner: spinach, mushroom, and feta crust-less quiche, pumpkin ale bread, and a baby romaine salad with orange slices, kalamta olives, and a lemon-honey vinaigrette (modeled after this salad).

Figure 6. Sunday night treat courtesy of the boyfriend! Perfect single serving size chocolate chip cookies. He doubled the recipe, but it made 6 large cookies instead of 4. Delicious and easy.

  2. Looks like you have the sauerkraut:pork chop ratio correct ;) I'm such a bad German - I just tried it for the first time a few weeks ago - and I LOVE the stuff! The tangy flavor is addictive!
