what i ate wednesday: issue 53

Figure 1. Breakfast: a bowl (x2) of Kashi Indigo Morning, Kashi 7 Whole Grain Flakes, a sliced banana, and cow's milk.

Figure 2. Mid-morning post-run snack: banana.

Figure 3. Lunch: a spinach salad topped with leftover yellow and green bell peppers, cashews, and leftover homemade baba ganoush with a side of celery and carrot sticks and peanut butter. PS baba ganoush is wonderful and makes a great salad topping.

Figure 4. Afternoon snack: a Gala apple, homemade pumpkin pie roasted almonds, and a cran-raspberry sparkling water.

Figure 5. Pre-dinner indulgence: red wine.

Figure 6. Dinner: an ugly, but delicious salad beast. Spinach, roasted asparagus, grape tomatoes, carrots, cashews, sharp cheddar cheese, leftover indian-spiced rice, all drenched in leftover homemade lemon-oregano vinaigrette.

Figure 7. Dessert: dulce de leche sugar-free pudding and whipped cream!

And that concludes another What I Ate Wednesday (featuring what I ate Tuesday, October 9).

  5. I always love your cereal bowls in the morning. So pretty! That salad beast looks awesome too.

Strange observation. You have two hair ties on your wrist in the picture with the banana. Do you wear them all of the time? People back in high school always made fun of me because I would always have a few spare hair ties and headbands around my wrist at all times. You can never be too prepared! :)

  7. I'm convinced that we would make horrible roommates because we'd always be stealing each others food. Loveeeeee all your eats, and that pudding and whipped cream are the perfect way to end a day.
