weekend review: baking therapy

Figure 1. Friday night's dinner: Cooking Light's pasta puttanesca (this is one of my go-to recipes) and a spinach salad with homemade honey-Dijon dressing.

Saturday morning I couldn't focus on work and just wasn't feeling life. When all else fails, bake. Once I got in the kitchen I felt 100% revived...

Figure 4. Saturday night's dinner: simple pan-roasted salmon with crispy skin, lemon pepper steamed broccoli, and roasted sweet potato apple mash.

Figure 5. Sunday night's dinner: crispy honey lemon chicken, rice pilaf, and roasted Brussels sprouts with bacon, garlic, and shallots. This chicken was good and I burnt it - I can only imagine how delicious it would be if I didn't...

  1. These meals look amazing! You know, I am exactly the same way. If I feel just the least bit down, all I have to do is bake something. I am on this huge banana bread kick lately! I think I've made 5 of them!

  2. What a great weekend of eats! That chicken sounds fantastic. Also I love Brussels sprouts with bacon and shallots. Actually I just love Brussels sprouts period. Well, as long as they're roasted. Steamed or boiled ones are just gross to me. :P

  3. These all look amazing! How do you come up with what to serve for dinner? If I had it my way, I'm do a breakfast/lunch/dinner meal plan a week in advance, but John likes to do things more on the fly. I hate wasting food and like having a nutrition plan. (Type A, what can I say). How do y'all balance it?

    1. ah, good question. i have learned to just plan meals for the weekend and the boy is happy with whatever i cook (as long as their is enough of it). so i usually plan weekend meals during the week based on what i am craving/what i see online in blog world. then, i present the 3 options to him before i go to the store and he usually will decide if he wants to X one in lieu of going out to dinner - so i try and be flexible here. luckily M and I both prefer eating in and like the same foods - so it is pretty easy.

  4. Those almonds look so good! I need to make something like that for myself--better to snack on almonds than my husband's potato chips. :)
