weekend review: thirds

A combination of really delicious food and a huge appetite sent me back to the kitchen for multiple helpings both nights this weekend. Forget seconds. I'm talking thirds, people.

Figure 1. Saturday night's dinner: chipotle pork, grandmother's healthified (uses pumpkin instead of oil or butter) cornbread, and a lemon + honey cabbage salad. Delicious, delicious, delicious.

Figure 2. Sunday afternoon baking: sweet almond and quinoa granola.

Figure 3. Sunday night's dinner: almond crusted tofu with roasted red pepper sauce served over black rice and a side of sauteed turnip greens with garlic and crushed red pepper. This is the best tofu dish I have made, hands down.

  1. I want to try that cornbread, I love that it's healthier! And yeah, can't blame you for going back a few times for tasty food like this Sara :)

    1. it is great cornbread. was a bit dense (i think i may have overmixed it), but even my boyfriend loved it despite the pumpkin!

  4. Was it difficult to get the tofu to crisp up? I've never tried it because I've always assumed the tofu would be too soft to get a good crunch on the outside.

    1. actually, i put the boy in charge of frying the tofu. but, while it wasn't super super crispy - it certainly had a relatively nice crust. i think pressing it first is key.

  5. I would definitely have gone back for seconds and thirds too. Almond-crusted anything is amazing, and I need to try that pork. It looks like professional barbecue!
