Figure 2.
Lunch: leftover quinoa mac and cheese (I froze the last serving for a quick lunch - it reheated wonderfully) on top of arugula. Yes, I ate this straight out of the arugula container. Some call it lazy - I call it efficient.
Figure 3. Afternoon snack: a Gala apple and a mix of cinnamon-roast and raw almonds.
Figure 4. Dinner: Scrambled eggs (1 egg and 2 egg whites) with a leftover grilled portobello mushroom (worth making!) and leftover marinated roasted red peppers, roasted zucchini and eggplant, and two pieces of whole wheat toast with Earth Balance.
And that concludes another What I Ate Wednesday (featuring what I ate Tuesday, May 29).
um. I always eat things out of their containers. I actually think it is more fun that way.
ReplyDeleteI love mushrooms. I'm actually having them for dinner!
i guess now that i think about it - i often eat of my yogurt containers and peanut butter containers...so it makes sense, no?
DeleteI'm glad to hear that freezing the quinoa mac and cheese worked!! I might make a big batch of that to reheat and take for lunch!!
ReplyDeleteyes! i wasn't sure. but, it is a great meal in that sense to make extra of and then portion out for meals to go.
DeleteThere's a thin, sometimes negligible line between laziness and efficiency. I tend to cross it too often. Your scrambled eggs look wonderful!
ReplyDeletehaha. whatever works, right?
DeleteListen, fewer dishes to clean is no joke. Efficiency is key.
ReplyDeletei agree, ms. emma. i agree.
DeleteYum your dinner looks amazing. I might have to try those scrambled eggs :)
ReplyDeletethe eggs were surprisingly delicious. the mushrooms were marinated and grilled already so it came together super fast, too!
DeleteMMM. I need something quick for dinner tomorrow and I have loads of veggies. I think scrambled eggs will be a winner!
ReplyDeleteeggs are the most perfect quick and healthy protein.
DeleteYou're just doing your part to save the earth. Eating from the arugula container = less dishes to wash, less water wasted, etc...
ReplyDeletei like that attitude!
DeleteI love scrambled eggs for dinner, love it!
ReplyDeletei do too. i usually dip them in ketchup, but with these great mix in - i didn't have to!
DeleteI call it efficiency too :)
ReplyDeletegirl you are a machine!! do you run everyday??
ReplyDeletethanks! i love the sound of that! i only bike on wednesdays (my day off before my long run on thursdays) and i don't do anything on saturdays. other than that, yeah.
DeleteI've never heard of those Skinny Cow bars - though I think I've seen their frozen treats. Are they good??
ReplyDeleteVancouverites would love you for eating out of the arugula container - the ultimate in hippie chic! ;)
yeah, they are new i think the ice cream has been around awhile. they are FREAKING AMAZING. every time i eat one i wonder how it can be skinny. same goes with the ice cream, though.
DeleteSeriously, I drool over your meals each WIAW - they always look SO yummy!
ReplyDeleteawww, thanks! that makes me feel so good!

DeleteThat's ok, I'm all for it!
DeleteThe quinoa mac and cheese serious sounds amazing. I'm bookmarking the recipe right now!
ReplyDeleteit is a new favorite for me!
DeleteI always eat out of containers whenever I can. As a matter of fact, I am pulling a breakfast for dinner situation right now, and eating out of a big almost-empty container of chobani yogurt- filled with oats, nut butter, fruit, and whatever else I felt like chucking in there... nice and convenient!
ReplyDeleteGreat eats as usual, need to get a grilled portabella still!
I totally get you on the efficiency! My boyfriend doesn't have a dish washer so I'm always scheming ways to use less dishes as possible!
ReplyDeleteYour caring about the EArth ; )
The quinoa mac and cheese looks so scrumptious. I need to make some soon!
ReplyDeleteHeya, thanks for passing by my blog and for the comment :) Dinner looks really tasty! Nom.
