what i ate wednesday: issue 40

 Figure 1. Breakfast: a bowl (x2) of Erewhon Crispy Brown Rice cereal mixed with Kellogg's All-Bran, 1/2 sliced banana, and almond milk.

Figure 2. Lunch: a spinach salad with tomato, 1/2 avocado, cashews, balsamic vinegar, and a drizzle of agave nectar.
Figure 3. Afternoon snack: a Pink Lady apple, Post shredded wheat, and cocoa-roast almonds.

 Figure 4. Snack so I don't die while cooking dinner: Bugs Bunny style carrot.

Figure 5. Dinner: Annie's mac and cheese, two hard-boiled eggs, and roasted asparagus with garlic and fresh lemon juice. And I repeat, hard-boiled eggs and mac and cheese is a fantastic combination.

Figure 6. Dessert: a Pink Lady apple with chocolate Greek yogurt dip (1/2 cup plain Greek yogurt + 2 T cocoa powder + 1 t vanilla extract + chopped dark chocolate).

And that concludes another What I Ate Wednesday (featuring what I ate Tuesday, June 26).

  2. that chocolate greek yogurt dip sounds amazing i'll have to try that! i also love cocoa dusted almonds..yum!

    1. it is really great! the key is to use a sweet apple, like a pink lady, otherwise it needs sweetened.

  3. Now that you mention it, I think I could definitely get behind the eggs + mac n cheese combo. Soft textures, yummy deliciousness...I like this idea to add some protein power to the pasta!

  7. Ah I love chocolate Greek yogurt dip for apples and bananas...soooo good. I also am a big fan of hardboiled eggs with mac and cheese but have never tried Annie's mac n cheese - will have to give it a go as I have seen it in the store! x

    1. it is! just make sure you pair it with a sweet apple - otherwise you need to probably sweeten it.

    1. it is really delicious. i finally found pink lady apples this week and have to work hard not to eat it every day because i only have so much greek yogurt!
