weekend review: pot luck quinoa

What does a healthy living blogger take to a pot luck? Quinoa casserole and salad, of course. I figured either people would love it, or they would turn up their noses at the healthy choices and I could take most of the leftovers home with me...

 Figure 4. Sunday morning baking: whole wheat banana bread snack cake. It may not look that exciting, but this stuff is gooooood.

Figure 5. Sunday night's dinner: chicken with lemon and olives, green pea rice, and simply sauteed asparagus.

  1. I disagree: that whole wheat banana snack bread looks totally exciting!! I love how dense it looks, most of my baking turns out puffy and cake like, but I want to make something like this!

  3. Good choice on the quinoa casserole! That's a pretty great health food for people who are otherwise suspicious of health food; it's close enough to rice or couscous that it's not a big jump in texture but it's definitely a nutritional powerhouse!

  4. Yummm I love quinoa. I actually made a quinoa dish for a potluck I went to on Friday! Mine had black beans, peppers, tomatoes, and avocado! So yummy!

  5. I think quinoa is a little more mainstream in terms of health foods. I think if you would've made something like a frekkah casserole people would have been a bit more wary. But it's no wonder they loved the quinoa casserole because it looks/sounds amazing!

    1. haha i agree. it is amazing too, by the way. i have been trying to get my boyfriend to agree to these for weeks. i finaly just made it and he said it was so good he wondered why i hadn't made it earlier. ugh.

    I'm drooling over that spinach salad (so colorful!) and the banana-bread snack cake is definitely exciting, in my opinion. I love when breads turn out dense like that. (:

  7. Excellent potluck choices! I always make sure to bring something that could sway un-healthy eaters, but if for some reasons they don't eat too much of it, something I'd love to eat a ton of :) I usually bring cookies. That's terrible eh? hehe. I should remember these dishes next time and maybe for once i won't bring dessert.

  8. I've always wanted to go to a potluck! Sounds like so much fun! Also, I love all the toppings you put in the salad and I definitely need to try that chicken dish. I'm always looking for new healthy flavors to bring to chicken!
