Figure 1. Mushroom-cheddar frittata. This was both Mom and I's first frittata experience and it came out better than we expected! This beauty contained mushrooms, roasted red potatoes, sharp cheddar, and broccoli.
Figure 2. A view inside for good measure.
Figure 3. Sour cream coffee cake with cinnamon oat streusel. This is a keeper, for sure. The sour cream batter with almond extract made this extra special. And it has oats on top, so it's healthy, right?
Figure 4. Before baking. Check out that streusel!
Figure 5. My plate: frittata, coffee cake, and a simple spinach salad. A perfect Christmas Eve.
Mmmm, the frittata looks great! I made a leftover ham and broccoli omelet-like casserole for Christmas morning, and it was fabulous. Love leftovers!
ReplyDeleteBreakfast for dinner is amazing, and it's such a smart tradition to do it the night before Christmas! I would totally love to steal that one...but John isn't into the breakfast at night deal. That one continues to blow my mind!
ReplyDeleteHope you had a great holiday...and a relaxing segue back into the work week!
You know I definitely approve of breakfast for dinner :D The frittata looks amazing, buuuuut I'm a sucker for anything with cinnamon and sugar, so the coffee cake definitely stole the show for me.
