what i ate wednesday: issue 23

 Figure 1. Breakfast: a bowl of Kashi GoLean Original mixed with Post Great Grains Raisin, Date, and Pecan cereal, 1/2 sliced banana, and almond milk. (Before this I had an un-photographed 1/2 banana and coffee).

Figure 2. Lunch: a spinach and spring mix salad with grape tomatoes, raw green cabbage, yellow bell peppers, chopped dates, peanuts, hummus, and balsamic vinegar. For the record, the combination of a simple salad with dates, peanuts, plain hummus, and balsamic vinegar is absolutely fantastic. I crave it almost every day. Please try this!

Figure 4. Dinner: shredded Brussels sprouts (one of my very favorite veggies!) with balsamic, pine nuts, and golden raisins alongside a baked sweet potato topped with goat cheese.

Shredded Brussels Sprouts with Balsamic, Pine Nuts, and Golden Raisins 

Recipe inspired and based closely on Jenna's delectable Caramelized Brussels Sprouts.

Ingredients:
12-14 large Brussels sprouts
1 tsp olive oil
1 clove garlic, minced
pinch salt
2 tbsp balsamic vinegar
3 tbsp toasted pine nuts
1 tbsp golden raisins

Slice Brussels sprouts until very thin. Heat olive oil in a large skillet over medium-high heat. Saute the garlic for 30 seconds, stirring constantly. Add the Brussels and saute for 4-5 minutes, stirring occasionally. Take the skillet off the heat, add the salt and vinegar and cook 30 seconds more. Toss with pine nuts and raisins. Enjoy!

  4. Your lunch salads always look awesome. I love brussel sprouts too, but I've never had them shredded - I'll have to give that a try one day.

  8. Oh goodness me...I am OBSESSED (with all caps..and bolded) with chopped date pieces, but I've never thought to put them on my salad...you are blowing my mind. :)

  14. Samoas!!!! Yay for girl scout cookies! :D That reminds me...I need to buy some stat haha
    Also the combo of golden delicious apple with pb is definitely one of the best out there, must make for a snack today mmmmm :)

    1. i agree about the golden delicious apple plus peanut butter combination. out of all the apple varieties out there - i think this type pairs the best with peanut butter. but any will do i suppose. :)

  15. Hmm okay awesome, I need a GS cookie now please :) I actually used to hate the flavor when I was younger! What a messed up kid I was haha. I enjoy those now and Thin Mints as well
    Dates on top of salads are great! A nice sweet taste

    1. well i can understand not liking coconut as a kid. but, they are really awesome. my brother was always the thin mint lover. we used to buy like 5 boxes and freeze them for emergencies ;)

  18. Your salads always look so pretty and colorful! I eat nearly the same salad combo everyday, but no matter how many times I eat it, I still crave it! The picture of the Girl Scout cookies definitely has me craving them now...I need to find some this weekend!

  19. Mmmm Samoas - my favorite! I have somehow managed to get around buying some but this might not last much longer ;)

    Love using just straight balsamic as my dressing. I definitely have to add some hummus to the party next time!

  25. So many good things here! Dates on a salad, shredded brussel sprouts (be still my beating heart) and you called them Samoas. Please tell me that you also call the peanut butter patties Tagalongs and we will be lifelong friends.

  29. That salad is freaking beautiful! yum! And I have seriously got to stop looking a peoples pictures of brussels sprouts. I'm obsessed with them and every time I see them I want to make them...husband doesn't want to eat them every day apparently...what ever that's about...
