weekend review: Easter weekend

 Figure 1. Easter dinner (Saturday night - made by mom and I): asparagus with balsamic browned butter, tomatoes Provencal (my boyfriend's mom's recipe), honey-baked ham, mom's broccoli casserole, perfect potatoes au gratin, mom's corn casserole, and a Sister Schubert's homemade yeast roll


Figure 3. Sunday night's dinner: pasta with sun-dried tomato pesto and feta cheese with roasted broccoli. And easy, fast, and delicious vegetarian dinner, which was perfect after a long weekend of cooking.

  1. Oh goodness... what great eats you have here, as usual girl :) The brownies looks pretty awesome, as does your Saturday Easter meal, very traditional and tasty!

  2. everything looks so delicious!! cooking with the family is always a good time, I love how everyone had something to contribute to that meal. I'm a big fan of the pasta too - that's what we had on Sunday! my favorite!

    1. yes, i agree cooking with family is the best! that was the first time i made this pasta and it was a huge hit with the boyfriend (although he added crumbled bacon in his!)

    1. haha i had the same thought when i picked them out to make. but, sadly - i was a little disappointed in the final brownie. too sweet and a bit of a weird texture. that key lime pie on the other hand - was.to.die.for.

    1. yeah the asparagus was really great - and from cooking light. i will repeat this for sure even on a regular weekend. and yes - looks like you have been doing a lot of travelling! i ate enough for both of us i'm sure!

  7. I was totally eyeing that asparagus recipe for our Easter dinner, but decided there was already too much butter. Was it awesome? Should I have made it?

    1. Katie, it was pretty fantastic. and not really all the buttery (although there was butter - not that much per asparagus). it was super easy though too - so certainly an option for you to make on a non-holiday night.

  9. Cadbury Creme Egg brownies??? Wowww! Sounds decadent - and I'm not even sure how you'd do it?? Love to hear! That pasta sounds amazing though! Love me some sundried tomatoes :)

    1. yeah it is really easy and really really delicious. and you would appreciate this - my boyfriend really loved the pasta, but added crumbled bacon to his. sounds right down your alley!
