Ready, set, food porn!
Figure 2. Lunch: quinoa with roasted tomatoes, walnuts, and olives on a bed of slightly-steamed spinach.
Figure 3. Afternoon snack: a Pink Lady apple and a mix of dry roasted almonds and salt & pepper cashews.
Figure 4. Dinner: Cinnamon sweet potato fries drizzled in honey alongside roasted green bean fries drizzled in hummus 'dressing' (plain hummus [I always use Sabra] thinned with almond milk) and toasted pecans. Fries with a side of fries. I like the sound of that.
Figure 5. Dessert: plain Greek yogurt and chocolate pudding = my new dessert obsession.
And that concludes another What I Ate Wednesday (featuring what I ate Tuesday, April 24).
Mmmm all looks yummy! That greek yogo and pudding sounds delish! Reminds me of when I ate no pudge fudge with yogo. Mmmmm :)

DeleteWow. I think I like every single meal here. Your breakfast looks fantastic, your salad looks amazing and I can never go past some good old sweet potato. I've never tried it with honey, which given how I try everything with honey, is weird. Definitely trying that out now!

DeleteFries with a side of fries, indeed! Roasted green beans are truly one of my favorite foods right now. How I ever ate them steamed is a mystery.

DeleteOmg, your whole day of eats is amazing. I am super jealous, especially of your dinner and that dessert! Also, today's WIAW is totally going to feature 1/2 a banana and coffee pre-run, as that has now become my go-to pre-workout snack :p

I got up today at 5:15 AM (!!) and ran before I had to spend the entire day on the wards in the hospital ! I need this for mental balance and in order to take the patients and not lose my sanity completely hahaha

Deleteand yes, i copy and paste my breakfast each week. it is the same thing usually! and yes i usually run every day of the week and have my 1/2 banana and coffee. so yes, i eat 1/2 banana and coffee and water, wait 30-45 minutes to digest then hit the pavement. then, after i stretch and shower i come back to a big bowl of cereal!
every day of the weeeek? aaaaah! thats a lot of running ^^
DeleteI used to do this but ended up really worn out and putting a huge strain on my joints :( It is not for everyone I guess
and how long/how many miles do you usually run for? I try to run 2 times a week for like 50 minutes or so at a moderate pace (cant convert into mph sorry hah!)
well okay, not every day. here is what i usually do: monday, tuesday, and friday i do a short 30 minute run at a faster pace. thursday is my long run day usually, right now i'm running for 80 minutes (slow pace). wednesday and saturday = no running. sunday is whatever i feel like it, usually a 40-60 minute run at a comfortable, fun pace.
Deletei used to run 6 days a week. now i know to take 2 days off completely from running and it is much better for my legs.
oh right and sometimes i do nothing at all on sunday's too!

DeleteI love that dessert too! I have been enjoying the same thing lately, but used vanilla pudding instead... I tend to be more of a vanilla flavor fan :) And roasted tomatoes are just so tasty too

That quinoa meal also looks great, is it just quinoa with tomatoes? How did you prepare it? My mom is obsessed with quinoa and it would be a great Mother's Day meal :-)!
ReplyDeletethanks, cara! thanks for following. the quinoa recipe is linked up - it is from eat, live, run. basically it is quinoa with cherry tomatoes that i roasted in the oven with toasted walnuts and kalamata olives. super delicious! i'm sure your mom would love it! let me know if you try it!
