Figure 1. Breakfast: a bowl of Kashi GoLean Original mixed with Post Great Grains Raisins, Dates, & Pecans cereal, 1/2 banana, and almond milk. I also had 1/2 banana (un-pictured) before my morning run.
Figure 2. Lunch: leftover roasted asparagus and Brussels sprouts with two of mom's red beet eggs. A bowl of plain Greek yogurt with homemade granola on the side.
Figure 4. Dinner: a Morningstar chicken patty with ketchup, roasted garlic and olive oil couscous, and steamed broccoli. This is my go-to quick and easy dinner.
And that concludes another What I Ate Wednesday (featuring what I ate Tuesday, April 10).
Haha those eggs are so funny! How does your mom dye them with beets?
ReplyDeletethey are so good though! i am getting the recipe from mom and will share soon!
Deleteoh my - no pink lady :( this must have been quite tragic for you hehe
ReplyDeleteis this a quarter cup of almonds??? I need to start measuring my nuts as well I ALWAYS go badly overboard with them. nuts are my guilty pleasure I can never stop eating them! only one more handful .... and my Mom bought me so much for Easter, a lot of macadamias as well (I hate those...they have over 700 calories per 100 gramm...FML)
aaah..where was I..oh right, please let me know if it's a quarter cup or else? thanks!
i try and keep my snacks ~200 calories or so. so i usually pair nuts with fruit so this is acutually 1/8 cup (2 Tablespoons) of almonds. this is about 60-80 calories of nuts depending on the type of nut. so 1/8 cup of nuts plus 1 apple (or sometimes i'll do dried fruit like raisins) puts me a little less than 200 calories. if i am just eating nuts i'll eat 1/4 cup (~180 calories), but i find my tummy does better when i pair nuts with fruit like this. (i'll also post this on your blog to be sure you see it, but thought others might be interested).
Deleteyum! your eats are amazing. I wish I could eat that clean and healthy for an entire day.
ReplyDeletethanks, mattie! i am not always so clean - but find it easier to do during the week. weekends are another story!
DeleteHow does your mom make those eggs?! They look so cool!
ReplyDeleteAnd I agree that Braeburns are subpar. I bought them when they were on sale one week and they are so tough.
getting recipe from mom and will share soon!
Deletebraeburns are not worthy. never buying them again.
Ohh Kashi goodness!! :) And broccoli is Jen's fav!
ReplyDeletelove the kashi!
DeleteHahaha that apple looks massive sitting next to the almonds. And those eggs - how on earth does your mom make them?! I'm intrigued...
ReplyDeletewill share egg recipe soon!
DeleteThat salad looks absolutely gorgeous, love the pink eggs! And your portion of broccoli looks massive - yay for veggie mountains!
ReplyDeletethis is actually the amount of broccoli i consume while consciously trying to keep my portion in check. i eat too much and then get tummy aches!
DeleteThanx for ur response! Im gonna start measuring from now on..but i dont even own a 1/8 cup !! 2 tablespoons will have to do! Or maybe ill just count out 10 almonds of the almond-jar of heaven mmmmhmmmm!! :)
ReplyDeletea shot glass works too. 1 ounce shot = 2 tablespoons. ;)
DeleteWillpower ftw!! :)
Deletewell i guess a shot is 1.5 ounces? oh who knows - just a shot glass not overflowing would do you find too.
DeleteEverything looks delicious! You are making me want some asparagus. Yum!
ReplyDeleteasparagus is so spring and i love it!
DeleteThose red beet eggs are tripping me out - awesomeness! I love the Kashi cereal, a great protein boost in a cereal ;) - had some for breakfast just this morning!
ReplyDeletehaha i love mom's red beet eggs. so tasty!
DeleteI had to do a double-take on those eggs! Were those for Easter? Too cool.

ReplyDeletethanks, jessica. i think i make a dang good salad myself. :)
DeleteWow, now those are dyed eggs ;-) I'm of the opinion that braeburns are good baking apples, but not good for eating raw. Not crisp enough!
ReplyDeleteyeah, not a fan of the braeburn. lesson.learned.
DeleteI just ate a bowl of plain popcorn, but now I want yours!!! I have a new unopened bag of the chocolate PB2...I think I may try it tonight. Great idea!
ReplyDeleteyeah do it! takes popcorn to an entirely new level plus adds protein!
DeleteI haven't tried the chocolate PB2 yet - just the regular PB2 - but now I'm itching to give it a try. That popcorn looks delish!
ReplyDeletechocolate pb2 is awesome. i mean....seriously how could it not be? ;)

ReplyDeletehaha they are! look for a recipe post on these from my momma next week!
Deletei love your breakfast! it's like a bit of everything awesome in a bowl ;)
ReplyDeletei hate whenever i buy the wrong apple! then you bite into it and it's totally not what you expected. the worst. okay not the worst but it definitely puts a damper on snack time ;)
oh i was so severely dissapointed when i bit into this apple for the first time. i actually threw the first one out i was so upset #dramatic
DeleteI am always encouraged to eat more greens when I check our your blog! Love the dinner..:)
