my less serious day: confession

I usually eat my way through two bags of spinach each week. I consume enough broccoli to satisfy a family of four. I often eat an entire eggplant in one sitting.

This morning's workout was a 35-minute stationary bike ride (ramp interval) followed by a 15-minute walk with L. Sadly, this was my only walk of the day as I forgot about my afternoon walk and it is now too dark after work for my evening walks. This afternoon's workout was a 60-minute Body Pump class.

Eating.



Breakfast was (surprise!) a bowl of cereal. Today's selection was Kashi U Black Currants & Walnuts cereal with 1/2 sliced banana and almond milk. Now, I don't want to spoil anything for my cereal review, but: this.cereal.is.awesome.


I went out to lunch today with a friend. First, we split this Caprese appetizer, which included crostini with basil, mozzarella, and tomato drizzled in balsamic vinegar (I had two) and a mixed green salad (I had 3/4).


For my entree I ordered the Spinach and Beet Salad, which include purple and golden beets, feta cheese, toasted walnuts, and french bread croutons in a white wine vinaigrette. I ate every bite.


My unattractive, but delicious dinner was a piece of whole wheat toast topped with goat cheese and an over-easy egg (salty, creamy goat cheese + runny egg yolk = delicious). A roasted eggplant on the side cooked simply with olive oil, salt, and pepper. And yes, I ate an entire eggplant.


Dessert was a glass of warm almond milk accompanied by a piece of whole wheat toast smeared with peanut butter, pumpkin puree, and melty chocolate chips.

    I think I need to come shopping in your closet, or let you help me dress myself. You have the best outfits!

  6. Most of the vegetables i buy for the "family," I eat by myself. I roasted a butternut squash last week and ate the entire thing in two days. I figure there are WAY worse things to eat a lot of!

  7. YUM! I have to say the egg-on-toast dinner looks like the best part of it to me lol! I've never seen an eggplant cooked that well either, you have some serious skills. Cute outfit too! :)

  8. all of your food looks awesome and let me say the food you are eating in volume is a okay girlie!! I love broccoli and often head a whole head or two at a time...I am kind of addicted! tonight i will probably be eating a load of brussels sprouts for the heck of it because i kind of love them but kind of dont, yes I am weird!
