what i ate wednesday: issue 19

Just admit it. You really just want to see pictures of food. So, let's cut to the chase...

 Figure 1. Pre-run fuel: 1/2 banana and coffee.

Figure 2. Breakfast: a bowl of Kashi GoLean Original mixed with Post Great Grains Raisins, Dates, and Pecans cereal, 1/2 sliced banana, and almond milk.

Figure 3. Lunch: a sweet potato topped with plain Greek yogurt, almond butter, and cinnamon. I popped this baby in the crock pot before leaving for work in the morning and returned home on my lunch break to a perfectly cooked potato and a house smelling of warm cinnamon-y goodness. Yum.

 Figure 4. Afternoon snack (my veggie fix): raw carrots and green peppers with hummus.

Figure 5. Dinner: leftover roasted vegetable baked polenta pie and kale salad with walnuts and feta. You can't beat a quick dinner of leftovers after a long day...

Figure 6. Dessert, part 1: a Pink Lady apple with cinnamon.

 Figure 7. Dessert, part 2: a shot glass full of peanuts.

And that concludes another What I Ate Wednesday (featuring what I ate Tuesday, January 31).

  1. Great eats that day! Plenty of healthy and fresh looking foods... yum :) The sweet potato combo for lunch is my favorite thing here... I could quite easily live on that meal, my favorite!

  3. EVerything looks delicious! I never thought of cooking a potato in the crock pot...do you add water or anything? Sounds great!

    1. Hey Fran! No, I just wash and poke the potato, give it a few squirts of spray butter (I like to eat the skin and this makes it really yummy), and a few good shakes of cinnamon. Then cook it on low and it takes 4-5 hours probably. I put it in at 7.30 and ate lunch at 12.30 and it was perfect!

  7. What a great idea to measure nuts in a shot glass! I'm always wondering/guessing how much an ounce is, and that is the perfect little measuring cup. And, in a college girl's apartment, you know we have a few of those floating around.

    1. shot glasses are the perfect size for ~80 calories of nuts. paired with fruit this amount is perfect for a snack. and yes...i have a few of my own still around from my college days ;)

  10. so delicious!! I love the sweet-potato-in-crockpot idea, I usually just microwave mine and it does NOT make my house smell like christmas haha. I've been planning on a kale salad for lunch actually so maybe I'll have to steal your toppings idea! :-D

  12. I think I need to start serving my nuts in shot glasses. That's a great way to ensure you're not overeating them, and a super cute (and healthier lol) way to use shot glasses!!

    And second, I would have never thought to put a sweet potato in my crock pot. That is such a great idea! Let's face it, microwaved sweet potatoes just don't measure up. (:

  31. Would you like to pack my lunch? That sweet potato looks amazing! I love sweet potatoes with peanut butter but had never thought to put one in the slow cooker. Oh, and that Kashi cereal is my fave. The amount of protein in it is crazy!
