what i ate wednesday: issue 29

 Figure 1. Breakfast: a bowl of Kashi GoLean Original mixed with Post Great Grains Raisins, Dates, & Pecans cereal, 1/2 banana, and almond milk. I also had 1/2 banana (un-pictured) before my morning run.

Figure 2. Lunch: leftover roasted asparagus and Brussels sprouts with two of mom's red beet eggs. A bowl of plain Greek yogurt with homemade granola on the side.

Figure 3. Afternoon snack: a Braeburn apple (I tragically bought the wrong kind) and almonds.

Figure 4. Dinner: a Morningstar chicken patty with ketchup, roasted garlic and olive oil couscous, and steamed broccoli. This is my go-to quick and easy dinner.

Figure 5. Dessert: popcorn with a drizzle of chocolate PB2 'sauce'.

And that concludes another What I Ate Wednesday (featuring what I ate Tuesday, April 10).

  2. oh my - no pink lady :( this must have been quite tragic for you hehe
    is this a quarter cup of almonds??? I need to start measuring my nuts as well I ALWAYS go badly overboard with them. nuts are my guilty pleasure I can never stop eating them! only one more handful .... and my Mom bought me so much for Easter, a lot of macadamias as well (I hate those...they have over 700 calories per 100 gramm...FML)

    aaah..where was I..oh right, please let me know if it's a quarter cup or else? thanks!

    1. i try and keep my snacks ~200 calories or so. so i usually pair nuts with fruit so this is acutually 1/8 cup (2 Tablespoons) of almonds. this is about 60-80 calories of nuts depending on the type of nut. so 1/8 cup of nuts plus 1 apple (or sometimes i'll do dried fruit like raisins) puts me a little less than 200 calories. if i am just eating nuts i'll eat 1/4 cup (~180 calories), but i find my tummy does better when i pair nuts with fruit like this. (i'll also post this on your blog to be sure you see it, but thought others might be interested).

    And I agree that Braeburns are subpar. I bought them when they were on sale one week and they are so tough.

    1. this is actually the amount of broccoli i consume while consciously trying to keep my portion in check. i eat too much and then get tummy aches!

  8. Thanx for ur response! Im gonna start measuring from now on..but i dont even own a 1/8 cup !! 2 tablespoons will have to do! Or maybe ill just count out 10 almonds of the almond-jar of heaven mmmmhmmmm!! :)

    1. a shot glass works too. 1 ounce shot = 2 tablespoons. ;)

  19. Wow, now those are dyed eggs ;-) I'm of the opinion that braeburns are good baking apples, but not good for eating raw. Not crisp enough!

    i hate whenever i buy the wrong apple! then you bite into it and it's totally not what you expected. the worst. okay not the worst but it definitely puts a damper on snack time ;)
