what i ate wednesday: issue 33

 Figure 1. Pre-run fuel: 1/2 banana and 1/2 mug of coffee. Yes, I was recently given a my less serious life coffee mug and it makes me very, very happy.

  Figure 2. Breakfast: a bowl of Kashi GoLean Original mixed with sweet almond and quinoa granola, 1/2 banana, and almond milk.

Figure 3. Lunch: a spinach and red cabbage salad with roasted red peppers, smoked almonds, balsamic vinegar, and topped with plain hummus thinned with almond milk.

   Figure 4. Afternoon snack: 100-calorie kettle corn popcorn pack.

Figure 5. Dinner: toasted pine nut couscous (Near East), a Morningstar chicken patty with a dollop of ketchup for dipping, and steamed broccoli.

Figure 6. Dessert: a Pink Lady apple drizzled with chocolate PB2.

And that concludes another What I Ate Wednesday (featuring what I ate Monday, May 7).

    Awesome looking food buy the way...especially those apples! I have PB2 headed my way and I can't wait to try it like that now!

  2. I have got to buy some chocolate pb2... I just tried regular for the first time recently (life changing) so yeah, the chocolate needs to come into my life now!

    1. yeah, you really need to. calorie count is about the same - but the chocolate is SO much more fantastic than the regular. it may change your life.

  3. That mug is amazing. I want one too! I've heard a lot of good things about thinned hummus as a dressing - can't wait to try it out myself.

    1. thinned hummus is my current dressing obsession. it makes it so creamy and delicious - but you are eating healthy fat and protein - not something gross.

    I used to use thinned hummus as dressing all the time - I need to get back into that habit!

    1. haha, it is epic! morningstar chicken patty's are fantastic. i am sure i eat too many of them - but they are so quick and easy and crispy and delicious i can't get enough!

    Steamed broccoli isn't the best vehicle for ketchup...but it's great for marinara sauce! {Another delicious tomato product}

  19. I used to eat that same popcorn EVERY night! I had to shake up my eating routine a little more, but that is seriously some good stuff :)
