what i ate wednesday: issue 34

  Figure 1. Breakfast: a bowl of Kashi GoLean Original mixed with sweet almond and quinoa granola, 1/2 banana, and almond milk. Pre-run I had 1/2 banana and 1/2 mug of coffee.

Figure 2. Mid-morning snack: a Pink Lady apple.

   Figure 3. Lunch: out to eat for a grilled salmon salad. Salmon grilled with an Asian barbeque sauce over mixed greens with hard boiled eggs, cucumber salad, and crispy wonton strips and ginger soy dressing on the side. Yum!

Figure 4. Afternoon snack: another Pink Lady apples and cinnamon-roast almonds.

  Figure 5. The "I really want a brownie batter milkshake as I drive 2 hours home substitute": a large diet lemonade from Chick-fil-A.

 Figure 6. Dinner: roasted broccoli with ketchup and an ooey gooey peanut butter and jelly sandwich.

Figure 7. Dessert: plain Greek yogurt with a crumbled Fiber One chocolate brownie, almond milk, and honey.

And that concludes another What I Ate Wednesday (featuring what I ate Tuesday, May 15).

  1. Great eats! I always do the "I really want a brownie batter milkshake but instead buy a diet sode only! Although your greek yogurt dessert looks like a fabulous alternative to ice cream and milkshakes!

    1. haha yeah i had to do something to kill this craving and the diet lemonade (which i love anyways) did the trick. if i hadn't just had a huge milkshake on saturday i may have even gotten that milkshake!

  2. I usually steam my brocolli but it looks so good roasted, I will have to start roasting it! All of your eats look great! I almost always have an apple for mid morning and afternoon snack

    1. oh roasting broccoli is the absolute best way to prepare it. it really transforms the flavor. give it a try!

  3. Crisp pink/honey crisps (they are similar right?) are my favorite apples ever! Good choice there Sara. Your dessert looks fantastic too, a healthy spin on a tradition item!

    1. i think they are different, actually. honey crisps are not quite as tart as a pink lady. i love them both though.

  9. How are those brownies? I used to like fiber one bars, but I haven't had many of their products recently.

    1. brownies are pretty good! i mean you can't compare them to 'real' brownies. but, for 90 calories - they are kickin'. the chocolate is better than the chocolate and peanut butter.

  13. The fiber one brownies are surprisingly really good! I think the plain ones are better than the peanut butter. They taste even better after a quick zap in the microwave.

    Between your brownie batter shake mention and your dessert, you've got me craving brownies!

  14. Are you a fan of those FiberOne brownies? I may have asked you that before but can't remember the answer. I saw them and was curious!

    I have so many dinners like yours it's not even funny. Just random food thrown together because I can't think of anything to make - but they are the best! Who doesn't love PB&J for dinner (and there's veg, so it's healthy!) x

    1. i discovered it one night by accident. i wanted a fiber one brownie, but knew i would be hungry if i didn't eat something more substantial. this happened and the rest is history!
