what i ate wednesday: issue 36

    Figure 1. Breakfast: a bowl of Kashi GoLean Original mixed with the last of my slightly stale but still tasty homemade quinoa granola, 1/2 banana, and almond milk. Pre-run I had 1/2 banana and 1/2 mug of coffee.

   Figure 2. Lunch: leftover quinoa mac and cheese (I froze the last serving for a quick lunch - it reheated wonderfully) on top of arugula. Yes, I ate this straight out of the arugula container. Some call it lazy - I call it efficient.

Figure 3. Afternoon snack: a Gala apple and a mix of cinnamon-roast and raw almonds.

 Figure 4. Dinner: Scrambled eggs (1 egg and 2 egg whites) with a leftover grilled portobello mushroom (worth making!) and leftover marinated roasted red peppers, roasted zucchini and eggplant, and two pieces of whole wheat toast with Earth Balance. 

Figure 5. Dessert:a Skinny Cow heavenly peanut butter crisp.

And that concludes another What I Ate Wednesday (featuring what I ate Tuesday, May 29).

  1. um. I always eat things out of their containers. I actually think it is more fun that way.
    I love mushrooms. I'm actually having them for dinner!

    1. i guess now that i think about it - i often eat of my yogurt containers and peanut butter containers...so it makes sense, no?

  2. I'm glad to hear that freezing the quinoa mac and cheese worked!! I might make a big batch of that to reheat and take for lunch!!

    1. yes! i wasn't sure. but, it is a great meal in that sense to make extra of and then portion out for meals to go.

  3. There's a thin, sometimes negligible line between laziness and efficiency. I tend to cross it too often. Your scrambled eggs look wonderful!

    1. the eggs were surprisingly delicious. the mushrooms were marinated and grilled already so it came together super fast, too!

    1. thanks! i love the sound of that! i only bike on wednesdays (my day off before my long run on thursdays) and i don't do anything on saturdays. other than that, yeah.

  10. I've never heard of those Skinny Cow bars - though I think I've seen their frozen treats. Are they good??

    Vancouverites would love you for eating out of the arugula container - the ultimate in hippie chic! ;)

    1. yeah, they are new i think the ice cream has been around awhile. they are FREAKING AMAZING. every time i eat one i wonder how it can be skinny. same goes with the ice cream, though.

    I love the look of those grilled veggies you have there. All your eats really :)

    Oh- I got that mindful eating book and started reading it- this is going to be a challenge lol

  14. I always eat out of containers whenever I can. As a matter of fact, I am pulling a breakfast for dinner situation right now, and eating out of a big almost-empty container of chobani yogurt- filled with oats, nut butter, fruit, and whatever else I felt like chucking in there... nice and convenient!
    Great eats as usual, need to get a grilled portabella still!

  15. I totally get you on the efficiency! My boyfriend doesn't have a dish washer so I'm always scheming ways to use less dishes as possible!

  18. Mmm, almonds. The cocoa dusted are my favorite for snacking, and the chocolate covered are the best for dessert :)
