what i ate wednesday: issue 56

 Figure 1. Breakfast: a bowl (x2) of Kellogg's All Bran, Arrowhead Mills puffed wheat, a sliced banana, and cow's milk.

Figure 2. Lunch: a romaine lettuce salad with carrots, cucumbers, grape tomatoes, cottage cheese, an Amy's Sonoma burger, ketchup & balsamic vinegar. Carrot sticks and peanut butter on the side.

Figure 3. Afternoon snack: a whole wheat pumpkin muffin adapted from Amanda's delicious recipe.

Figure 5. Dinner: leftover roasted butternut squash alongside a veggie-egg scramble. For this version I roasted eggplant and sauteed yellow bell pepper, onions, and garlic with olive oil, s&p, red pepper flakes, and balsamic vinegar until done. Then I scrambled 1 egg and 2 egg whites, mixed the eggs with the veggies, and topped with sunflower seeds for crunch. Delicious!

Figure 6. Dessert: dark chocolate pudding mousse and whipped cream.

  1. Haha, it'd good to know I'm not the only one reusing (produce) packaging that way!

    Your lunches make me crave cottage cheese every time. I guess I'll have to get myself some soon!

    2. No but it's still on my list! That's the problem of living on my own: I wouldn't be able to eat the whole pan fast enough. If there was a way to scale the recipe down to result a single-serving (muffin) however ...

      And I did get myself some cottage cheese :).

  5. Yum. Those pumpkin muffins looks so good.

    And I love reusing containers as carrying cases for my food! I saw on pinterest awhile back that someone had taken an old CD Case (the kinds that come with 50 or so unwritten discs) and used it to hold their bagel. Genius!

  11. Those muffins look great, adding sunflower seeds to eggs is a neat idea, and any day that ends with chocolate pudding is bound to be fantastic!
