what i ate wednesday: issue 71


 Figure 1. Breakfast & mid-morning snack: I fear I forgot to take pictures yesterday morning, but here are the empty dishes for proof. For breakfast I had puffed wheat + All Bran + cocoa powder + banana + milk. My snack was a sliced Gala apple sprinkled with cinnamon.

Figure 2. Lunch:a spinach salad topped with tomatoes, mushrooms, sprouts, cottage cheese, slivered almonds, and golden raisins.

Figure 3. Afternoon snack: a cocoa loco chewy bar.

Figure 4. Dinner: a couscous-veggie-sausage (delicious) mess. I browned I link of spicy chicken sausage, sauteed an onion, mushrooms, zucchini, and yellow squash in the same pan in a bit of olive oil, Italian seasoning, salt, and pepper. When tender, I added ~1/2 cup marinara sauce and a cup of cooked couscous and mixed it all together. Yum!

  1. Wow, that salad is insane. So many awesome toppings! I love the addition of raisins.

    And those enjoy life bars are great. I haven't had any in awhile, but my favorite were the sunflower seed and apple ones.

  2. Enjoying breakfast is more important than snapping pictures of it :).
    It's one of my goals to finally create a salad inspired by yours this year. Fingers crossed for spinach to appear in stores again sometime soon.

  4. Hmmm that cous cous sausage meal looks delicious - i wish i could get chicken sausage here.. its pretty much just pork :/ which i dont eat.

  6. Haha, I always forget to take the picture too and half eaten meals aren't all that pretty :/ That couscous "mess" looks amazing. I'm going to try it with some Chicken Apple Sausage.

  8. I finally got around to making that quinoa casserole you had posted several times on previous WIAW and it was great! Visiting your blog always reminds me how much I love salads, which is way better than some of the reminding I get from other blogs about how much I love...well, anything chewy, sweet and cookie-shaped ;).

  12. I never, ever remember to take pictures of my breakfast (or most meals, for that matter!) So, I admire your discipline.
    Chocolate & Cinnamon Chex are laced with crack. I'm convinced. They're too delicious & addicting!

  13. Your dinner looks so good! I love chicken/turkey sausages. I've been having such a hard time finding them in my grocery store lately though!

    What do you think of those cocoa loco bars? I think they're tasty, but I wish Enjoy Life would create products with more substance to them (ie. more healthy fat, more protein, more fibre)!

    Taking pictures was always hard for me to remember to do, but I've become quite good at it the past 2 weeks. Documenting seriously everything I eat, and the time... it's been wonderful to look at :)
