weekend review: panini party

I spent the weekend at my parents' house so I didn't actually do any of my own cooking. However, Friday night was the celebration for my dad's birthday and so mom and I (mostly mom) hosted a panini party for the family. Who knew smashed food could taste so good?

To make your own panini: assemble your favorite combination, spray each side of sandwich with cooking spray, and cook on a panini press until bread is brown and cheese is melted.

    and cookie ice cream sandwiches are the best! yum!

  4. @Imagine: My mom made these. Here is what she told me to tell you.

    "Use the chocolate chip recipe on the back of the Nestle's bag using semi-sweet chips. I used a cookie baller to make them similar sizes but you can drop by tsp onto the cookie sheet. Slice ice cream when soft enough to get the knife through, then use a circle cookie cutter to cut the ice cream, placing it between two cookies. Wrap in plastic wrap and refreeze.

    Yummie. Of couse you could just stick a home-made chocolate chip cookie into a dish of ice cream but it's much more fun to eat as a sandwich.

    Serve to people you love."
