what i ate wednesday: issue 32


 Figure 1. Breakfast: (yes, I have the same thing pretty much every day. I love it!) a bowl of Kashi GoLean Original mixed with Post Great Grains Raisins, Dates, & Pecans cereal, 1/2 banana, and almond milk. I also had 1/2 banana (un-pictured) before my morning run.

         Figure 2. Lunch: a spinach and romaine salad topped with a Morningstar chicken patty, leftover baked onion crescents (see this post for an explanation!), smoked almonds, white wine vinegar, and ketchup.

  Figure 3. Afternoon snack: Kashi GoLean Crisp! Cinnamon Crumble with cinnamon-roasted almonds.

Figure 4. Dinner: roasted broccoli and a baked sweet potato two ways - half topped with hummus, nutritional yeast, and smoked paprika and half topped with plain Greek yogurt, almond butter, and cinnamon. Why choose just one sweet potato combination? (Inspired by this recently (to me) discovered post by the Healthy Everythingtarian via Pinterest).

  4. Love the idea of doing one potato two ways--'cause yeah, sometimes you just can't decide if you want a sweet sweet potato or a savory one. And popcorn is my new favorite "dessert"--light, crunchy, and hits the nighttime snacking spot.

    2. I'm going to have to try that. My husband likes to have a BOWL of ketchup with his french fries so I hardly think he would have trouble finishing off a bowl of veggies if ketchup is involved!

    1. yes, nutritional yeast is a new one for me...too. i found it in the health food store - great for you and tastes like cheese! wonder if you have it in canada?

  10. I've never thought of putting almond butter onto a sweet potato, but will hafta give that a try! :) And I just ordered some of the chocolate PB2 after loving the original, so looks like the popcorn will be added to my list also!

  14. Mmm, I love kettle corn. Looks delicious. I also love having something savory + sweet. I always eat an egg + avocado sandwich and a bunch of chocolate afterwards. Salty first, finished with sweet. So satisfying :)

  15. did u buy the cinnamon roasted almonds or make them yourself???
    How long did u roast the broccoli for and what seasoning did u use? so many questions (as usual) but I cant help myself because it looks so delicious! everything you post I want to eat hahaha.

    1. hey hey! i bought these, although i recently Pinned a recipe to try and make my own cinnamon roasted almonds.

      i roast broccoli for 20 minutes at 450 degrees (i like it really roasted), flipping halfway through. i usually use either just plain salt and pepper or some kind of dried Italian herb mix.

  16. Sweet potatoes have been my go-to snack as of late-- usually topped with something similar to your "figure 6" option, possibly cottage cheese instead of Greek yogurt.

    All your eats look very intuitive to me ;)
