what i ate wednesday: issue 8

Figure 1. Breakfast: a bowl of Kashi GoLean Original mixed with Great Grains Raisins, Dates, and Pecans cereals, 1/2 sliced banana, almond milk, and a cup (or several) of black coffee.

Figure 2. Lunch: a massive spinach salad with red bell pepper, tomato, carrots, mushrooms, goat cheese, pine nuts, golden raisins, and hummus.

Figure 3. Afternoon snack: pumpkin pie yogurt (Greek yogurt + pumpkin puree + cinnamon) topped with Great Grains Raisins, Dates, and Pecans cereal.

Figure 4. Dinner: a pumpkin-hummus apple cheese melt pizza a la Amanda and a heaping bowl of roasted broccoli.

Figure 5. A close-up of the pizza goodness. An Ezekiel 4:9 Sprouted Grain Tortilla with pumpkin puree (2T), hummus (2T), and a 1/2 thinly sliced Honeycrisp apple. I topped half of the pizza with shredded cheddar cheese and the other half with cinnamon and ricotta cheese. The entire thing baked in a 350 degree oven for 20 minutes. You have my permission to drool.

 Figure 6. Dessert: chocolate pudding topped with a crumbled whole-wheat graham cracker.

  7. Whoa, apples, pumpkin, and cheddar cheese! I feel that this must be tasted to be believed. If you could send me some, that would be greeeeeat ;) And that salad looks fantastic, I love golden raisins.

  10. Hey lovely! Oh my goodness, I'm completely loving your food - the snack (mmm....), your breakfast cereal (i adore) and dinner! :) That pizza loooks incredible. And you KNOW I am down with lots of veggies at dinner. I have to recreate that - isn't it cool how apple marries so well with cheese? I always make that for my boyfriend - he digs it. While I don't eat dairy, I do have daiya so I can try it with that. So happy to have found your blog, I love it! <3 xyx

  11. I'm loving everything! Particularly that pizza. Yum! I definitely need to try making a pizza with pumpkin puree.
    And I always put hummus on my salads too! It's amazing.
