weekend review: food is life

What did you do this weekend?

Me? I cooked. I ate. I lived.

Figure 1. Friday night's dinner: pasta with oven roasted eggplant, goat cheese, and mint and a spinach salad with a homemade honey-lime vinaigrette.

Figure 2. Saturday morning baking: Amanda's oatmeal muffins - half with Enjoy Life 'chocolate' chips and half with dates.

Figure 3. Saturday afternoon baking: smoked paprika roasted almonds. So much better than the pre-roasted/flavored kind.

Figure 4. Saturday night's dinner, courtesy of M: maple-mustard chicken thighs (subbing coconut aminos for soy sauce), mashed red potatoes, and grilled asparagus. This is one of our favorite chicken recipes!

Figure 5. Sunday night's dinner: chickpea potpie with cornbread crust and an arugula salad with corn, avocado, and a homemade red pepper-tomato vinaigrette.

Question: I've been into making my own salad dressings lately. Anyone interested in the recipes? They are usually simple variations of ones I find online. Comment if you care!

  3. Salads are like not my favorite kind of food when it's getting so cold and rainy outside - but I loved your more savory dishes. The chickpea potpie sounds amazing, I am just reading through the recipe!

  4. How was the Potpie? I have been wanting to make one but haven't seen many chickenless recipes. Yes, please share the dressing recipes! I haven't used store bought in a while because they all have a lot of sugar.

  5. You certainly were busy in the kitchen this weekend! I'd definitely be interested in those salad dressing recipes. I usually do olive oil and balsamic vinegar, so I'd be interested in mixing it up!

  7. Oh yeeees I would love to see some salad dressings! All your home-cooked food looks so great, especially those smoked paprika almonds. I have been getting into savory almonds recently and this looks like a perfect recipe!

  8. I am seriously jealous of your weekend! I cooked and ate, but very little living happened- mostly work and studying :( Oh student life lol
